Strawberry Cheesecake parfaits ....sunny and hot

While I rarely make dishes with pre-packaged items, this one is worth a splurge now and then. When you need a quick dessert and have fresh fruit around it’s perfect.
Wonderful with strawberries, but equally as good with fresh peaches, cherry or blueberry pie filling, lemon curd use your favorite flavor or whatever you have fresh and on hand.
                            Strawberry Cheesecake Parfaits
 
 
1 (3.4 oz box) Cheesecake flavored Jello pudding
2 cups milk
1/2 cup Whipped cream (Cool-whip can be substituted)
1/2 cup graham cracker crumbs
1 1/2 to 2 cups fresh sliced strawberries
 
 
Mix pudding according to ‘5 minute’ instructions on box. Refrigerate for five minutes, while it’s in the fridge, slice strawberries and crush graham crackers.
Remove pudding from fridge and stir in whipped cream.
 To assemble parfaits Layer as follows in clear glass ( 4 half pint mason jars work perfectly)
 
1 tablespoon graham cracker crumbs
2 tablespoons sliced strawberries
2 tablespoons pudding
2 tablespoons sliced strawberries
2 tablespoons pudding
top with remaining graham cracker crumbs and a strawberry
 
Refrigerate until serving (ready in about 10 minutes or can be made ahead.)
