Layered Cabbage Soup....Sunny...50's

Now that the days are shorter and turning cooler, our thoughts turn to simmering soups of all kinds, nothing like coming into a bowl of hot soup after a long cold day, wouldn't you agree??

Layered Cabbage Soup


6 cups chicken broth
6 cups coarsely chopped cabbage
2 cups chopped kale or other greens
2 cups chopped carrots
3 cloves garlic
6 ounces Kielbasa or other hard sausage
1 tsp. tarragon
2 tsp. salt
Combine all of above and bring to boil, then cover and simmer 30 minutes.
Meanwhile stir 1 tsp. tarragon into 1 1/2 cups thick yogurt (plain Greek yogurt or strained homemade), set aside.
Place thick slice of sourdough or rye bread in each of 6 serving bowls.
 In 4 tablespoons of butter sauté 2 cups sliced onions.
Cook until just starting to brown and then put on top on bread.
Remove meat from soup, slice and add to bowls. Sprinkle each portion with 1/4
cup shredded cheddar cheese.(See pic on left.) Ladle hot cabbage soup
into bowls. Top with dollops of yogurt and sprinkle Smoked Paprika
over yogurt.

This is a delicately flavored soup that is surprisingly filling.
