Better for you Banana bread.....................

This recipe is for all those banana's that you buy and then somehow they don't get eaten right when they are at that peak moment of perfect banana ripeness.  Toss them in the freezer then make up a loaf of this at your convenience!
Really wonderful grilled and sprinkled with cinnamon sugar and plenty healthy enough for a quick breakfast!

Better for you Banana Bread
1/4 cup melted butter or margarine
1/2 cup sugar
1/2 cup brown sugar
2 Large eggs
1/2 cup fat free plain yogurt
3 over-ripe bananas, mashed smooth (to equal 1 1/2 cups mashed)
1 tsp. maple flavoring (or vanilla)
1/2 cup grape-nuts cereal
2 cups all purpose flour
1/2 tsp. baking soda
1 rounded tsp. baking powder


Beat butter, eggs,sugars, bananas and yogurt together, add flavoring and grape-nuts. beat well. Add flour and baking soda and powder, stir just till combined.
Pour into 2 greased loaf pans (light colored ones works best, since it cooks a long time) I sprinkle the top with cinnamon sugar and  bake at 350* for 45-50 minutes till tests clean when a knife is inserted near center.
Cool five minutes, remove from pan and cool completely then refrigerate.
This bread is even better the next day  !!!!!
