Peanut Butter Breakfast bars...Partly sunny

Here's a healthier option for snacking.
We like them as breakfast bars. They are however quite addictive!
                   Peanut Butter Breakfast Bars

3/4 cup dark brown sugar
1/4 cup oil

1/4 cup unsweetened applesauce
1/2 cup peanut butter, crunchy or smooth
1 large egg
1 cup quick oats
3/4 cup flour

1/2 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 cup raisins OR dates

1 cup shredded carrots

 Cream together sugar, oil, applesauce, peanut butter and egg. Add dry ingredients and stir in carrots and raisins(or dates) last , batter will be stiff, spread into pan with the back of a wooden spoon or rubber spatula.
 Bake in greased 8x8" or 9x9 pan at 350 for about 25-30 minutes. Test with knife. Cool and cut into bars. Good room temp. but even better after they've been refrigerated!

**To make even healthier for you, use an equal amount of whole wheat flour and Old fashioned Rolled oats to replace all-purpose flour and quick oats, and use an additional 1-2 T. of applesauce!
