Sweet Potato Relish...Frosty...Sunny...30's

Here's a unique snack to go with cold weather indoor activities.
You'll be surprised at the combination of flavors, and it's nourishing as well.

3 Tablespoons finely chopped sweet onion
3 Tablespoons finely chopped parsley or cilantro
5 ounces Rotel tomatoes, drained
1 Teaspoon taco seasoning
