Meet the babies.........

Along with the spring storms yesterday we had our first kidding of the year , Button delivered two darling little does!
They entered the world to some good old fashioned spring storms~~  downpours of rain (over three inches yesterday)  with high winds, lots of thunder and lightening and flooding, We were fortunate that the tornado's stayed away from us, but others in our state weren't as fortunate.
These babies are second generation Mini-LaMancha's .Their daddy is our good-natured Riley that you met a couple of weeks ago~~~ shown here as a baby .


Grace is colored just like her mama and is a 'no ears' baby while Valerie is darker with the black tips and is a 'half ears' baby (also known as elf ears) like her daddy.

In spite of the storms the babies were safe and dry in the barn,with their mother keeping an eye on them.

Workin' out the roommate agreement......

Riley and Bandit have been 'neighbors' for 14 months now and with better weather and more grazing available it was time this week for them to become 'roommates' . Yeah, seems we thought it was a better idea than they did.  Here they are working up the 'roommate agreement' !

Better for you Brownie Cake

This has always been one of our favorite recipes, and everyone who ever had it seemed to agree. But the original recipe called for 18 TABLESPOONS of margarine!  So we just didn't feel good about making it, since it was one of our favorites I kept working with it till I got it down to just 8 Tablespoons of margarine.  We don’t miss those 10 extra Tablespoons  at all  and didn’t sacrifice any of the chocolaty goodness!
 
Better for you Brownie Cake
 
In bowl combine:
1 cup sugar
1 1/2 cups all purpose flour
3/4 tsp. baking soda
 
In small sauce pan combine until melted:
4 T. margarine
1/2 c. water
1/4 c. unsweetened cocoa powder
 
Add to flour mixture, stir and add:
2 eggs, beaten
1 tsp. vanilla
1/2 cup low-fat buttermilk
1/4 cup fat-free plain yogurt
 
Pour onto lightly greased  15x10 jelly roll pan.
bake at 350* for 20 minutes or  till tests done.(toothpick inserted in center comes out clean)
while it bakes make the frosting:

Melt together:
4 T margarine
1 T. unsweetened cocoa powder
3 T water
Remove from heat and stir in:
1 1/2 cups powdered sugar
1/2 cup shredded coconut
Stir well, and  pour over warm cake.
 
Enjoy!
(We promise you won’t miss the 80 grams of fat and 700 calories we removed! )
