These take a little more time to make but are worth it. Serve with fruit.
1 1/2 cup buttermilk
3 egg yolks
1/4 cup melted shortening
1 1/2 cup sifted flour
1 tab. baking powder
1/2 tsp. baking soda
pinch salt
3 egg whites, beaten stiff
Combine 1st three in bowl. Sift dry ingredients into large bowl, then stir in wet mixture (don't beat) only until smooth.
Fold in egg whites gently and cook on hot griddle or waffle iron, browning both sides.
